Can't go wrong with glacé cherries as far as I'm concerned.
Ingredients
1/2 c | butter, melted |
1 c | brown sugar |
1 small | can of sliced pineapple |
10 | maraschino cherries |
3 | eggs, beaten |
1 c | caster sugar |
1 c | sifted plain flour |
1 tsp | baking powder |
1/4 tsp | salt |
5 Tbsp | pineapple juice |
In a heavy 10 inch cast iron skillet melt butter and add brown sugar and blend well.
Arrange pineapple slices and cherries in the skillet on top of brown sugar and butter. In a large bowl mix remaining ingredients and pour over pineapple mixture in skillet. Bake at 170C for 35 minutes.
Out of the oven...
Let cool in the skillet then turn upside down onto serving plate. Yummy!
How clever are you!!!!! Whenever i make things like this...things always go pear shaped...or maybe I should say pineapple shaped. Was it hard to get the cake to come out of the tin?
ReplyDeleteamazingly it just slid out. I was a bit nervous. The pan I used is a cast iron Le Creuset type so it's enameled but it's not really non-stick. I'm guessing the amount of butter that you melt makes it just pop out!!
DeleteAwesome! Love a bit of kitsch in the kitchen :)
