Real tomato sauce!

Well, as it's raining really heavily now, I thought I'd take the passata I made yesterday and magically change it into tomato sauce - with the help of a recipe, not a wand. ( I wish!) 



I did a mixture of Bridget's and the one in this lovely book


I had to miss out celery salt as even though Lloyd said we have it I couldn't find it anywhere. Neither could I find any ground ginger, which I was sure we had. Anyway! I just made do.  It tastes lovely, actually, but it's a little sweet. I think the recipe asks for far too much sugar so I'd perhaps half it next time.

  3. Ooo I love Hugh Ferny WhittyBotty, even though I can't remember his name quite correctly.

    Last year I made chilli jam, and it also called for a lot of sugar, too much in my humble opinion. Not that it's got anything to do with your tomato sauce, which looks quite spectacular by the way!

  5. Lovely bottling there, Laura. They look fantastic. I love the River Cottage books. The little bread book is simply to die for.

    Lloyd pronounced the sauce lovely - so I'm pleased with that.
    I adore Hugh. I'd like him to come and stay for a wee while :)

    The bottles are repurposed ones that had green tea in them - they worked perfectly. THe label is nicked *shame*

  7. Looks very yummy! I spent the rainy day making feta with Pip. Now it's hosing and we've got water running under the house. It's mostly under control but at least it's showed us where we need to do some remedial drainage work!!

    I am a huge Hugh fan too. I've just finished watching Autumn and Spring on DV. It makes me want to sell my house and more to Dorset.

  13. Just wondering how you intend to store these. In the fridge? I made mine today, not sure how well it would keep if I didn't refrigerate it.
    I presume you didn't do the water bath step once you'd bottled it all up?

  14. Bridget, I sterilized the bottles and sealed them when still hot. Lloyd assured me (!) that this will keep them well, but the one that we're using is kept in the fridge.
    So far the others are perfect looking.

  15. OK thanks. I'm a little unsure as a lot of recipes said to do the water bath. I think last time I made this sauce (it was a while ago) I stored it in the fridge, but will try on the shelf and see how it lasts!
