First you need to pick a wheelbarrow load of artichokes!

Then strip off a lot of the outside leaves - leave some of the small leaves and the heart.

You need to boil them for about ten minutes.

After that take them out and soak them in garlic olive oil.

After everything is good and messy put them on the brabeque to char them a wee bit.

Remove and cut off more of the leaves - only leave the soft ones. Put what's left into jars with olive oil! Voila! ! 1 wheelbarrow -------> 2 jars!
