We have guests arriving at The Acorn today and I always give guests fresh eggs from the girls, but I thought I might make some cupcakes too. Chocolate this time.
Here's what I did
Ingredients
1 1/3 cups all-purpose flour
1/4 teaspoon baking soda
2 teaspoons baking powder
3/4 cup unsweetened cocoa powder
pinch of salt
3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs
3/4 teaspoon vanilla extract
1 cup milk
Method
1 Preheat oven to 175 degrees C. Line a muffin pan with cupcake thingies. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
2 In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the muffin cups 3/4 full.
3 Bake for 15 to 17 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
Makes 18 cupcakes (using Wilton cupcake papers) with flat tops

Then I used the same frosting recipe that I did for the red velvet cupcakes as it was so lovely!
These are the ones for The Acorn - hope they like them!
They are pretty nice even if I do say so!

What a lovely idea, they will love them! I was just thinking about the Acorn this morning and ruing the fact that we didn't buy a place with a little cottage. We have lots of buildings but alas not the money to convert them. Wish it was me coming to stay!
ReplyDeleteWeirdly, when we were looking there were a couple of places that had cottages on them and we said NO WAY! What would we do with 2 houses? It was mums idea really to put the Acorn on originally for her and dad to stay in over summer, sadly that never happened as Dad doesn't really manage the flight, but we ended up with the wee cottage and I have to say it really is the best thing. I've just been there now dropping off the cakes and it's just so cute. Alison, do they do the same in Oz where you can buy an old house and they move it onto your property? It's a really cheap way of doing it - maybe something to think about at some stage??? Oh and you'd be welcome any time! xx

ReplyDeleteWeren't we lucky. The cupcakes and the eggs were delish and we loved our stay in The Acorn, thank you Laura! We saw the baby crea and he certainly is very cute. Didn't have time to wander round sadly and only wish (kind of!) that it was chilly enough to light the fire.
